  1. I used olive oil in the bottom of my frying pan and brought it to medium heat
  2. Empty Polenta into pan and use a fork to chop up into fairly small clumps
  3. Add butter and continue to stir and "mash" up the clumps
  4. Add salt to taste and keep stirring until it is hot all the way through and no more clumps remain.
  5. Add cheese and remove from heat.
  6. Serve and enjoy!

Polenta is made with cornmeal and most often served in restaurants as a creamy, porridge kind of thing — which sounds bad and reminds me of Oliver!, as in, "Please sir, can I have some more…?"But that's not the one I'm talking about. Easy, fast, cheap and gluten free-you've got my attention! I used 'from scratch' polenta instead of the prepared type. I enjoyed the addition of paprika and added a bit more than a pinch once I tasted it. I used smoked paprika and it gave such a nice earthy flavour it was hard to stop at just a pinch.
