- Take 1 Green Plantain
- Prepare 1 Oil
- Prepare 1 Salt
In Colombia we boil them, roast them, make stews and soups with them. But mainly we fry them to make patacones, and Patacon Pisao is the most commonly used name to refer to the twice-fried and smashed version I made here. Although a simple process, making patacones could be considered an art form. The resulting patacones should be somewhere between a pancake and a chip.
Steps to make Patacones (Basic):
- Peel and cut plantain in small rounds of about 1/8 in thickness
- Place plantain slices into a small amount of oil (I use medium-low) and cook both sides lightly. You want them semisoft on the top and bottom.
- Take the slices from the oil and smash them flat. I generally use some wax paper for this part to keep them from sticking to surfaces.
- Place them back into the oil and cook until light brown. Remove & let any oil drain on a paper towl. Add salt while still hot.
- If you wish, add garlic powder or other tasty spice/spice mixture.
Toppings for patacones are a matter of taste. In addition to the guacamole, hogao, and ropa vieja Paula suggested, she also approved of my idea of diced avocado instead of guacamole. Patacones or Tostones (Fried Green Plantains) Both Paul and I tried fried plantains for the first time when we were serving missions for our church - me in New Jersey where some Puerto Rican friends called them tostones and him in Costa Rica where these fried green plantains are known as patacones. Patacones or Tostones are made from green plantains peeled and cut cross-wise. Patacones are served in restaurants all over Colombia as a side dish for fish dishes or as an appetizer with guacamole, hogao (tomato and onion sauce) or ají (hot salsa).
