Steps to make Aloo paratha:
  1. Boil potatoes in a pressure cooker. Peel the skin and mash them. Add salt, crushed green chillies, roasted cumin seeds powder, garam masala powder, chat masala, chopped coriander leaves and lemon juice. Combine well. Stuffing is ready.
  2. Knead soft dough from wheat flour, salt, oil and enough water. Rest for 15 minutes. Prepare equal size balls from it.
  3. Roll out roti from it, put stuffing in the centre, start pleating, seal it and roll out paratha. (Dust flour while rolling). Cook both sides on tawa with oil till golden.
  4. For making purse shape:- roll out roti from a ball. Cut into quadrilateral shape as shown in picture. Roll out another roti. Cut it too into quadrilateral smaller than first one. Now spread thick layered stuffing on bigger part (leave edges).
  5. Now fold all edges at upper side. Apply little water on folded edges. Put smaller quadrilateral on it, press gently and stick it. Cook all sides on tawa with oil on low flame till golden.
  6. Prepare thin cylindrical log from dough. Cook it too.
  7. Arrange both parts in purse shape. Make design with green chutney, tomato sauce and little heart biscuit. You can make as per your creativity.
