It looks and tastes a little like a lumpy pear, but it's not necessarily a fruit you want to eat raw. Glyko Kydoni (quince preserve) is one of my favourite autumn fruit preserve. Depending on the variety, once cooked it transforms into a nice pinkish to red colour and all its beautiful aroma is released. There are many ways to make this preserve and this one is my first attempt to make.

Instructions to make Pear glyko:
  1. Peel with care the pears and remove the seeds place them in a bowl of water with lemon juice.
  2. In a pot place the sugar, water and green colour to boil for 4’ then place the pears and boil in medium heat for 15’
  3. Let stand 24 hours next day remove the pears with care and place 1 almond in each pear and 1 clove add the globose to the syrup and start boil when is thick place the pears add few cloves
  4. When is thick turn off the heat cover with a towel, when cold place some in a little plate to check the thickness, if it’s watery boil some more. When cold serve in a jar. 45 pieces
