A thick, rich Bolognese with great depth of flavour. As with all my pasta recipes, I include a step to toss the pasta IN the sauce, rather than just placing pasta in bowls and spooning over sauce. Pasta Bolognese, or pasta in a tender and richly-flavored meat and vegetable sauce, is one of my favorite Sunday night family suppers. The sauce simmers on the stove for several hours, making the house smell delicious and inviting — and it's one of those dishes that just tastes like it was made with.

- chop (in food processor) carrots, green onions, chili and celery then add to a hot pan with olive oil; full heat.
- water to the boil
- add the meet, fennel seed and oregano to the hot pan.
- when its cooked add balsamic to caramelize and garlic then add the can of tomatoes and the same amount of water in the tomatoes can. Wait until thickened.
- add salt then pasta to the boiling water
- Save a cup of pasta water. When pasta is cooked add to the bolognese sauce, mix then add grated parmesan cheese and basil. Turn of the heat. Add olive oil to taste. Stir.
- Serve in a big plate. Basil to decorate. A little more olive oil.
