The ingredients needed to make Kandi Podi/Andhra Lentils Powder:
- Take 1 small cup Toor dal/pigeon peas
- Take 1small cup Chana dal/Bengal gram
- Take 1small cup Urad dal/Black gram
- Prepare 1 small cup Yellow moong dal/green gram
- Prepare 1 1/2 tbsp Cumin seeds
- Get 15-20 Red chillies
- Get As Required salt(Approximately one teaspoon)
It will emanate a nutty aroma. Kandi Podi is a roasted dal powder from Andhra Pradesh. Eaten with rice and ghee/sesame oil, it is similar to Tamil Nadu's Paruppu Podi. Known as Paruppu Podi in Tamil Nadu, this roasted lentils powder (Dal Powder) is eaten after being mixed with steamed rice topped with some ghee or sesame.
Instructions to make Kandi Podi/Andhra Lentils Powder:
- Take moong dal, toor dal, chana dal and urad dal each one small cup.One and half tbsp of cumin seeds and required amount of salt too.
- Heat Kadhai and Dry roast Moong dal for 5 minutes or till it’s roasted completely.
- Likewise dry roast all the dals/lentils separately till they change into golden brown. Now add red chillies and required amount of salt too. I’ve added rock salt., you can add table salt too. Now roast them for one more minute and switch off the flame. Mix all the ingredients thoroughly for few seconds.
- Now transfer the roasted ingredients onto a plate and allow to completely cool down to normal temperature. To increase the shelf life we have to grind the powder when the roasted ingredients are at room temperature.
- Transfer the roasted ingredients into a clean and dry mixer grinder. Grind the roasted ingredients till it turns into a fine powder.
- Now the traditional recipe kandi podi/Andhra lentils powder is ready to serve. Transfer the Andhra lentils powder onto a bowl and keep it there for few minutes.,because while grinding some amount of heat generates. So it takes few minutes to come down to normal temperature. When it becomes cool transfer into an airtight container or glass jar to retain its freshness. This stays good for minimum two months.
- The kandi Podi is served with hot steamed rice and dollop of sesame oil/ghee and mango pickle along with other delicacies (Andhra Brinjal curry n mix vegetable stew)
