- Prepare 1 cup Bengal Gram or Chana Daal
- Take 1/2 cup Black Gram or Urad Daal
- Prepare 1/4 cup Pigeon Pea Lentils or Toor Daal
- Make ready 1/4 cup Sesame Seeds
- Take 1 tbsp Salt
- Take 6-7 dry Red Chillies
- Take 2 Sprigs Curry Leaves
- Get 4-5 Garlic Cloves
- Take 1/8 tsp Asafoetida
- Take 1 tsp Oil
Idli milagai podi means comfort food in Tamilnadu. It is the best lunch box friendly food our moms knew those days. Idli podi is a flavorful condiment made of lentils,seeds and spices. It is known by different names such as milagai podi, gun powder, idli karam podi or chutney If you are making idli podi in more quantity then you will need to roast the chana dal and urad dal separately as each dal has different roast timing.
Instructions to make Idli Podi/Milagai Podi:
- Dry roast Sesame Seeds and let them cool. Do not roast them much otherwise they tend to release oil. Roast Red Chillies until they are crisp and keep aside.
- Roast Curry Leaves and Cloves too until crisp. Add a teaspoon of oil to the pan and roast Bengal Gram first. Roast until it changes colour and becomes crisp.
- Similarly dry roast both the remaining dals. Add a teaspoon of oil to both of them too. Remember to roast them all separately. Let them cool down first before grinding. Grind the dals separately followed by the other ingredients.
- Add Asafoetida while grinding. Store them in airtight containers and relish upto 6 months at room temperature and more if refrigerated. Use clean and dry spoon while using it.
Idli podi/ Milagai podi is generally mixed with ghee, sesame oil or garlic infused oil before serving with South-Indian snacks like idli, dosa, medu-vada. There is a popular South-Indian dish called as podi idli were the idlis are tossed in this podi powder. People even relish it as a side dish with curd rice.
